The Receiving position is very importante because the Receiving clerk receives all the incomimg goods. So the receiving clerk must be very professional.

- The Receiving clerk should have a copy of the original purchaseorder so that the incoming goods can be checked against it to ensure that what has arrived is what was actually ordered so that all sub-standard items can be returned with anote of shortages and returns on a deliverynote.

-Any alteration to the delivery note must be countersigned by the delivery man.

- Suppliers should be encouraged to send invoices with deliveries so that the actual priced can be checked against theagreed price on the purchase order form.

- When the goods arrive the copy of the delivery note must be signed and thegoods put into the store and entered on bin cards.

- If the goods are delivered directly to the kitchen. The excutive chef or sous chef must countersign to verify that they have received the goods.

- If thr receiving clerk has not got the knowledge necessary to check the quality of the products. The executive chef should take over the task of physical checking.

- During the handling and entering of delivery note , errors of various kinds may be discovered.This should be recorded instantly.

- The supplier should be notified and a correction attached to delivery note.
